About Chef Rachel Torres
Owner and Executive Chef, Rachel Torres, operates the deli/bakery outsourcing business, Dolce, LLC in the Market St. gallery district in Louisville, Kentucky. She specializes in nutrient dense soups, sandwiches, and baked goods. She learned about developing umami flavors while in a food science class studying synergistic glutamate compounds at the Women Chefs and Restaurateurs National Conference in Atlanta, Georgia in November 2006.
For her clients, Rachel needed to create depth and layers of flavor without animal products, which is a challenge: “Think about it—you can add a ham hock to a pot of beans and they instantly have that ‘somethin somethin’, but without the ham hock, its really difficult to make layered, deep flavors pop in the food, which is what Ooohmami does.” Rachel has been testing and creating recipes for three years resulting in this exciting, innovative product. “There’s nothing else like it on the market. It’s also great for meat items that need a flavor boost because different meats have different levels of umami nucleotides. For instance, turkey has more than chicken and so a dish made with turkey may be just right as is, but a chicken one may benefit from the upgrade of umami.”
